I'm an Okie!

Ok, so I was born and bread in Oklahoma. When I was transplanted to Florida as a child, I missed a lot about Oklahoma. Mostly the food. Let's face it, Florida is hardly the south. Maybe a few households, but most of Florida is a mix of everything. The most southern thing about Florida is it's geography. Anyhow, what is more southern than your Grandma's cooking. In my case, my Nanny. That is what I call my Grandma. Her cooking was always the best. I guess that is where I got my love of cooking. When she passed away in 2005, the only thing I wanted of hers was her recipes. Nothing makes me feel more connected to her than making one of her dishes. So, I thought what better way to honor her than to share her recipes with others. If you love southern cooking, keep me in mind. And if you have any requests, I will do my best to find them for you.

Tortilla Soup

This is one of those "Semi-Homemade" or "30-Minute Meals" type recipes. My Nanny introduced me to the basic recipe. But after making it her way a few times, I found a way to make this a quick meal.

Tortilla Soup
1 Box Chicken Broth
2 Cans Tomatoes - Mexican Style
(the ones that state they have cumin and other spices)
1 Box Cream Cheese
Rotisserie Chicken from the Deli
Tortillas
Veg Oil
Shredded Mexican Cheese
Avocado
In a large pot, pour in entire box of broth and place on med-high heat. In a blender or food processor, blend canned tomatoes and cream cheese until smooth. I usually do one can and half the block of cream cheese at a time. Depends on what you like. Mix the blended mixture into the broth. While that is heating, remove meat from rotisserie chicken and put into soup. Once it is all heated through, it is ready to serve. Easy, right?!?
I then like to take tortillas and cut them into large strips and fry them in the veg oil. They are great with the soup. You could also make quesadillas to go along.
Serve soup garnished with cheese and avocado.
YUMM-O!

It is my kids favorite as well as my husband. Nothing is better than good ole southern food especially when our grandmothers cook it. I cant wait to start following your blog.
