I'm an Okie!

Ok, so I was born and bread in Oklahoma. When I was transplanted to Florida as a child, I missed a lot about Oklahoma. Mostly the food. Let's face it, Florida is hardly the south. Maybe a few households, but most of Florida is a mix of everything. The most southern thing about Florida is it's geography. Anyhow, what is more southern than your Grandma's cooking. In my case, my Nanny. That is what I call my Grandma. Her cooking was always the best. I guess that is where I got my love of cooking. When she passed away in 2005, the only thing I wanted of hers was her recipes. Nothing makes me feel more connected to her than making one of her dishes. So, I thought what better way to honor her than to share her recipes with others. If you love southern cooking, keep me in mind. And if you have any requests, I will do my best to find them for you.

Fudge Pudding

If you like chocolate, then you are in for a treat. This is my oldest son's favorite. My Papa's too. This is actually my Papa's mother's recipe, which she passed down to my Nanny.

Fudge Pudding
1 C. Sugar
1/2 C. Melted Butter
2 Eggs
2 TBS. Flour
4 TBS. Cocoa
1 tsp. Vanilla
1/2 C. Chopped Pecans (optional)
Mix ingredients in order given and pour into a greased 8" x 4 1/2" pan. Place this pan in a larger pan to create a water bath. Pour enough water in bottom pan to come up about 1/2 the way on your smaller pan. Make sure not to put too much, or else is will splash in your pudding. Bake for 45 minutes at 350. There will be a crust on the top and a gooey bottom. Allow to cool a little before serving. Can be served plain or with whipped cream or ice cream.
