Mexican Fruit Cake
2 C. Sugar
2 Eggs
2 C. Flour
1 T. Soda
20 oz. Can of Crushed Pineapple
Small Can of Fruit Cocktail
1 C. Chopped Pecans (optional)
Mix all ingredients and bake in a standard cake pan at 350 for 45 minutes. While baking, make frosting (below). While cake is hot, poke holes in it with a wooden spoon (or whatever else will work). Pour frosting over cake.
Frosting
1 8 oz. Cream Cheese (softened)
1 Stick Butter
2 C. Powdered Sugar
The only fruit cake i will eat is the no bake ones. They are very different from the traditional recipe, utilizing marshmallows and graham crackers. Your recipe looks and sounds so different you got me at the frosting part ohmy pouring all over the top. I think i am going to try this recipe. Thank you so much.
