I'm an Okie!

Ok, so I was born and bread in Oklahoma. When I was transplanted to Florida as a child, I missed a lot about Oklahoma. Mostly the food. Let's face it, Florida is hardly the south. Maybe a few households, but most of Florida is a mix of everything. The most southern thing about Florida is it's geography. Anyhow, what is more southern than your Grandma's cooking. In my case, my Nanny. That is what I call my Grandma. Her cooking was always the best. I guess that is where I got my love of cooking. When she passed away in 2005, the only thing I wanted of hers was her recipes. Nothing makes me feel more connected to her than making one of her dishes. So, I thought what better way to honor her than to share her recipes with others. If you love southern cooking, keep me in mind. And if you have any requests, I will do my best to find them for you.

Chicken Spaghetti

This is one of those dishes that everyone loves. It feeds a crowd and it will definitely be a requested item if you try it.

Chicken Spaghetti
1 Whole chicken (or whatever pieces you like i.e. white/dark meat)
1 Large Onion
2 Stalks Celery
2 TBS. Minced Garlic
2 Cans Tomato Sauce
Tabasco Sauce
Ketchup
1 Small Can Mushrooms with Juice
1 TBS. Chili Powder
1 Box Spaghetti Noodles
Boil chicken in large pot. Remove to cool when done. In boiling water add chopped onion and chopped celery. Boil until tender. Add garlic and tomato sauce. Add Tabasco and ketchup to taste. Add in can of mushrooms with the juice and chili powder. Salt and pepper to taste. Chop us cooked chicken and add into pot. Cook approx 30 minutes. Then add in entire box of spaghetti. Cook until tender. It gets better the longer it sits. Serve topped with Parmesan cheese and some bread to sop up the juices!
For a shortcut, I buy a rotisserie chicken from the deli and use chicken broth. I cook the veggies in the broth, add the rest as directed. Then I cut up the rotisserie chicken and add that in. It is a time saver and the chicken is well seasoned.
